Well, here's one for now, but it might be easier if I just gave you the recipe ... because a trip to Oregon for cookietheft (while you'd be welcome to visit) might be a bit troublesome.

Peanut Butter Mutant Cookies

Cookie dough:
3/4 cup (175 mL) extra crunchy peanut butter
1/2 cup (115 mL) Crisco vegetable shortening (or butter)
1 1/4 cups (300 mL) firmly packed light brown sugar
1/2 cup (115 mL) large semi-sweet chocolate chips
1/2 cup (115 mL) miniature semi-sweet chocolate chips
1/3 cup (75 mL) Heath toffee chips
3 tablespoons (45 mL) milk
1 tablespoon  (15 mL) vanilla

1 egg

1 3/4 cups (415 mL) flour
1 tablespoon (15 mL) cinnamon
1/2 teaspoon (2.5 mL) nutmeg
3/4 teaspoon (4 mL) salt
3/4 teaspoon (4 mL) baking soda

Cookie dough rolling mix:
1/3 cup (75 mL) white sugar
1/2 teaspoon (2.5 mL) cinnamon
1/8 teaspoon (0.6 mL) nutmeg

Combine the peanut butter, shortening/butter, brown sugar, chocolate chips, toffee chips, milk and vanilla in a large bowl.  Beat with an electric mixer at medium to high speed until everything is well blended.  Add the egg and beat just until blended.

Combine the dry ingredients (flour, cinnamon, nutmeg, salt, baking soda) in a different bowl and stir together by hand until well mixed.  Add the dry ingredients to the creamed mixture and mix until blended.  I use a big spatula/spoon for this to avoid burning out the electric mixer.  If the dough is still too gooshy (measuring peanut butter can be difficult), mix in a little more flour (1 or 2 tablespoons).

In a tiny bowl mix the white sugar, cinnamon and nutmeg for the rolling mix.  First roll the mixed cookie dough into 1.25 inch (3 cm) balls between your hands.  Next, roll them in the sugar rolling mix until coated, before placing them two inches (5 cm) apart from each other on a cookie sheet.  Flatten the balls in a crisscross pattern with the tines of a fork.

Bake at 375°F (190°C) for 7 to 8 minutes.  Cool at least 2 minutes on the cookie sheet before transferring to foil to cool completely.  Makes about 3 dozen cookies.

Save the leftover rolling mix in an empty spice jar for the next batch (or to put on buttered toast when feeling decadent).  Just add more sugar if you're running low.
