I am unfamiliar with Doki-Fansubs but I have been wanting to get Clannad VN and have been having trouble finding information on it around here. It's nice to finally find some insight into the memorial editions priority.
I've been looking at the memorial edition because it seems like the easiest to buy but if an English patch is not going to be done for it for a while where could I download/buy another version, everywhere I have looked around the internet seems extremely dodgy for downloads and IDK where I could buy the other versions.
There are safe and good places to download the game, but I'd rather not provide any links, since I could get in trouble.( ^_^') As for buying the regular or Full Voice versions of the game for PC, yes, they can be a little hard to come by these days. There is one used and one new copy of the Full Voice version available on Amazon.com:

The former has voices, the latter does not. Of course, your Memorial Edition copy trumphs both of those versions, so if you're patient, I would recommend just waiting until we release our ME patch, though it's going to be a while. Coincidentally, I can't be completely sure, but I think this one might be the Memorial Edition, so avoid buying it (since you already have it):
